Grandma used to cook this dish for me, and I loved it!
Thanks to Skype in the kitchen, the wifey updated the recipe a little ... and voila, 2010 Stir-fry Minced Pork and Potatoes.
ps - Just remember to slice the potatoes thinner then I did, and stir-fry the potatoes before you cook it with the minced pork. This way, the potatoes will be nice and soft ;-)
